INGREDIENTS
1 large avocado
1 pound asparagus
4 eggs
4 handful mixed greens
1/2 a cup chopped dill
3 tbs olive oil
1 tbs avocado oil
1 lemon
salt and pepper for taste
INSTRUCTIONS
Preheat oven to 350F, trim ends of asparagus , add to a baking sheet, drizzle avocado oil and salt, and let it bake for 10 minutes in the oven.
In a small pot, boil water with a little bit of salt and cook the eggs for 10 minutes. Meanwhile, cut the avocado into cubes and put in a large salad bowl. Cut the mixed greens to smaller pc and add to the bowl.
Chop the dill and add to the mixed greens and avocado. Cut up the asparagus into bite size pc and add to the salad bowl. Peel the eggs, cut them into wedges, and add to the bowl.
In a small container, put the juice of a whole lemon, olive oil, salt and pepper, drizzle over the salad and toss well.
