Ingredients
1 and a half pound of baby potatoes cut in half
8 oz fresh green beans cut into 1 inch pc
2 cups of fresh basil leaves
1/2 a cup walnuts
half a lemon
1/3 cup olive oil
1 cup of cherry tomatoes cut in half
10 mozzarella balls cut in half
a little salt and pepper
Directions
In a large pot, heat water, put the potatoes, add a little bit of salt. Let in cook for 15 minutes, add the green beans and let it cook for another 10 minutes. Drain the water and let it cool down.
Put most of the basil, most of the walnuts, half a lemon juice, oil, salt and pepper into a food processor until finely chopped.
Put the potatoes and green beans in a large bowl, add the cherry tomatoes, mozzarella balls, and the pesto. Add a little salt and pepper, and sprinkle some basil leaves and walnuts on top.
