SALMON WITH MANGO-AVOCADO SALSA
INGREDIENTS
2 wild salmon fillet (about 160g each)
3 tbs of olive oil
1 lemon
For the salsa
1 jalapeno pepper diced
1 avocado diced
1 cup of diced mango
1/3 cup red onion minced
3 tbs cilantro, chopped
1/2 a lemon
pinch of salt
DIRECTIONS
Mix all the salsa ingredients in a medium size bowl and set aside.
In a medium frying pan, heat up the olive oil, put the salmon, cook for about 4 minutes in each side.The salmon can be grilled as well.
Put the salmon on a plate , squeeze lemon juice on top. Arrange a half of the salsa on top of the fish, and the rest on the side.
