INGREDIENTS
2 large zucchini, peeled and sliced into 6 slices each.
1/2 tsp salt and pepper
1 cup organic low sodium Marinara sauce
1 large egg
1/2 a cup ricotta cheese
1/2 a cup cottage cheese
1/4 cup chopped basil
1 garlic clove , minced
1/2 a cup shredded mozzarella
3 tbs of olive oil
DIRECTIONS
Preheat the oven for 400F. Spread 1/4 cup of marinara sauce on the bottom of a medium baking dish. Take the sliced zucchini, add little bit of salt and pepper, add the oil and grill on a grill pan for 2 minutes on each side.
In a medium bowl, mix the egg, ricotta, cottage cheese, basil, garlic, salt and pepper. Spread the mixture on each zucchini, roll up the slices and put them in the baking dish on top of the marinara sauce.
Top each roll with 1 tbs of marinara sauce and 1 tbs of shredded mozzarella. Cover with foil and bake for 20 minutes.
