GREEN FRITTATA
INGREDIENTS
1 cup chopped onion
1 cup chopped mushrooms
2 cups mixture of Swiss chard, spinach, kale chopped
3 organic eggs
3 egg whites
2 tbs of spelt or quinoa flour
salt and pepper for taste
2 tbs of olive oil
DIRECTIONS
In a medium frying pan heat the olive oil, first saute the onion then add the mushrooms, and when they start turning brown, add the greens, mix them all together on medium heat.
While the vegetables are being cooked, in a medium bowl whisk together the eggs, egg whites, flour , salt and pepper. Pour the egg mixture over the vegetables, cook for 2 minutes, cut it in 4 quarters and flip to the other side (it is easier when cut to flip). cook for another 1 minute and turn off.
