INGREDIENTS
1/2 cup olive oil
1/4 cup lime juice
1/2 tsp crushed red pepper flakes
1 lb boneless skinless chicken breast
1/2 tsp salt
1/2 tsp pepper
3 bell peppers sliced
1 large onion sliced
whole wheat tortillas
DIRECTIONS
In a large bowl mix the olive oil (a little bit less than the half a cup), lime juice, red pepper flakes. Season the chicken in salt and pepper, add to the bowl and mix. Let it marinate for 30 minutes.
In a large skillet over medium heat put the rest of the olive oil, add the chicken,cook until golden from both sides for a few minutes, and remove. Slice the chicken into strips and set aside. Add the onion and bell peppers, cook for about 5 minutes, add the chicken and toss for a few minutes. Serve over whole wheat tortillas.
