INGRIDENTS
3 tbs olive oil
4 medium potatoes with red skin, peeled and cut into pc
1 onion cut into small pc
pinch of crushed red pepper flakes
1 large avocado
1 tsp salt
4 organic eggs
1 and a half cut spinach
a little olive oil, balsamic vinegar for dressing.
DIRECTIONS
In a large frying pan heat the oil, add the cut potatoes, cook for 10 minutes on medium heat. Add the onions, red pepper flakes, cook for another 5 minutes until potatoes are tender, add salt and turn off.
In another frying pan put a little bit of oil, add the 4 eggs and cook then sunny side up.
In a medium bowl put the spinach, add olive oil and balsamic vinegar , mix it all up and divide it into 2 plates. Put half an avocado on each plate, half of the potatoes on each plate, and 2 eggs on each plate.
