INGREDIENTS
1/2 whole wheat flour
2 eggs beaten
3/4 cup chopped hazelnuts
2 8oz skinless halibut fillet
1 and a half tsp salt
1 tsp pepper
3 tbs olive oil
2 oranges
1 1/2 tbs balsamic vinegar
1 package of pre cooked ready to eat beets
5 0z spinach
DIRECTIONS
Place the flour in a shallow dish, put the eggs in a second bowl, place the hazelnuts in a third dish. sprinkle the fish with 1 tsp salt and 1/2 tsp pepper, dip the fish in the flour then dip it in the eggs , and then coat in hazelnuts.
Heat 2 tbs of oil in a medium skillet , add the fish, and cook until nuts are toasted, 4 to 5 minutes on each side.Transfer the fish to a large plate.
In a large bowl peel the oranges and section them, add the spinach and beets, add vinegar , oil, salt and pepper, whisk to combine, add the fish on top.
