VEGAN TORTILLA
INGREDIENTS
2 large portobello mushrooms
1 red bell pepper
1 green bell pepper
1 onion
1/4 cup cooked white beans
4 whole wheat flour tortillas
1 small tomato cut into small cubes
1 avocado cut into small cubes
2 tbs olive oil
a little salt and pepper
DIRECTIONS
In a medium skillet heat up the oil, cut the onion and stir on the skillet. Cut the peppers, slice them and add to the onion, cut the mushrooms to thick slices and add to the vegetables, put a little salt and pepper, let it cook for a few minutes until the vegetables become a little brown and turn off.
Put a 1/4 of the vegetables on each tortilla, 1 tbs cooked beans, 1 tbs tomato cubes, 1 tbs avocado cubes.
