CORN AVOCADO CHICKEN SALAD
INGREDIENTS
2 large cooked chicken breast chopped
2 large avocados
1 cup corn
2 cups mixed greens
2 tbs of dill chopped
For the dressing:
1/2 a lemon freshly squeezed
3 tbs extra virgin olive oil
salt and pepper for taste
INSTRUCTIONS
In a large salad bowl , shred the chicken breast and place in in the bowl. Add 2 cups of mixed greens (can cut them a little if the leaves are too big). Cut the 2 avocados into cubes, and add to the bowl. Chop the dill and add it to the bowl.
Add 1 cup of corn, mix, and then add the dressing ingredients to a small bowl (olive oil, lemon, salt and pepper).Drizzle the dressing over the salad, toss and combine.
