INGREDIENTS
2 cups mixed greens
2 medium tomatoes
3 small cucumbers
1 orange bell pepper
1 red bell pepper
1 medium avocado
juice from half a lemon
3 tbs extra virgin olive oil
salt and pepper for taste
INSTRUCTIONS
Cut the mixed greens into small pc and place it in a medium salad bowl. Cut the tomatoes into small cubes, peel the cucumbers and cut them into small cubes, add the tomatoes and cucumbers into the bowl. Cut the 2 bell peppers in the middle, take the seeds out, then cut them into small pc and add them to the bowl. Cut the avocado into small cubes and place them in the bowl.
Dizzle the olive oil, lemon, salt and pepper, mix, and serve. Can add cooked or grilled chicken breast to the salad and make it a meal.
