INGREDIENTS
3 medium red and yellow beets
2 navel oranges
2 cups mixed greens
1/2 cup pomegrante seeds
3 tbs olive oil
salt and pepper for taste
1 tbs dijon mustard
OPTIONAL
1/2 cup feta cheese (crumbled)
DIRECTIONS
Heat 3 cups of water in a medium pot, add a little salt, put the beets inside and cook them until they are soft (about 50 minutes). Meanwhile, cut the mixed greens to large pc and put them in a medium salad bowl. Cut the oranges into thin wedges and add them to the bowl. Put the juice that is left from cutting the oranges in a small bowl (need 2 tbs), add the olive oil, mustard,salt and pepper, mix, and set aside.
When the beets are cooked, peel off the skin, and slice into 1/2 inch wedges, add to the bowl. Pour the dressing on the salad, mix, and garnish with pomegrante seeds on top.
Option: can add crumbeled feta cheese on top.
