EGGS ,CAULIFLOWER, AND GREENS
INGREDIENTS
3 tbs of olive oil
2 eggs
1/4 cup chopped red onion
2 cups spinach
1/2 cup roasted cauliflower
1/2 avocado sliced
1 tbs fresh dill
salt and pepper
DIRECTIONS
Heat 2 tbs of olive oil in a medium skillet, put the chopped onion and saute for 3 minutes. Add the roasted cauliflower and the spinach, put some salt and pepper, stir for about 2 minutes.
Transfer the vegetables to a bowl, add one more tbs of olive oil to the pan, crack the eggs , cook for a minute until the eggs are cooked, add some salt and pepper, transfer the eggs to the bowl and put them on top of the vegetables. Add the dill and the avocado and serve.
