INGREDIENTS
1 large sweet potato
4 organic eggs
1 large avocado
salt and pepper
red pepper flakes
1/2 a lemon
2 tbs olive oil
DIRECTIONS
Preheat oven to 400 F, clean and peel the sweet potato, lay the potato on a cutting board, and slice lengthwise into 1/4 inch slices (about 4 slices). put the potato slices in the oven for about 20 minutes until the potato slices become soft.
Meanwhile, cut the avocado, put it in a bowl, mash with a fork until it becomes creamy, add salt, pepper, and squeeze lemon on the avocado, set aside.
In a large pan, heat 2 tbs olive oil, crack the 4 eggs and cook for a minute, remove.
Remove the sweet potatoes from the oven, place them on a large plate, spread the mashed avocado over the sweet potato toast, and put an egg on top of each toast. Sprinkle a little salt and red pepper flakes on top.
