BEET SALAD WITH PARSLY AND NUTS
INGREDIENTS
3 medium beets
1 handfull parsly
1/4 walnuts
1/4 pine nuts
2 tbs olive oil
pinch of salt and pepper
DIRECTIONS
Peel the beets and cook them whole in a pot with hot water for an hour until soft. Remove and slice into very thin slices (can use mandolin), arrange on a plate. In a medium pan heat 2 tbs olive oil, add the walnuts and pine nuts, add the parsley (slice it before)mix all for about 2 minutes on medium heat, add salt and pepper, and remove from heat. Add the parsley and nuts to the center of the plate with the beets.
