VEGETABLES WITH EGGS
1 onion cut in small pc
1 small green bell pepper cut in small pc
1 small red bell pepper cut in small pc
4 asparagus spears cut in medium pc
4 eggs
3 tbs of olive oil
salt and pepper
fresh basil for garnish
1 medium avocado sliced for garnish
Directions
In a medium pan heat the oil, fry the onions first, add salt and pepper. Add the peppers, asparagus and mix for a few minutes. Make 4 small wells in the surface of the vegetables and break each egg into the well. Cover the pan with a lid and let it cook on medium heat for about 7 to 8 minutes. Remove from pan, put on a plate, add the basil and avocado on top of the eggs and vegetables.
