LENTIL SOUP WITH VEGETABLES
INGREDIENTS
2 cups of green lentils
1 medium onion
2 carrots
2 zucchini
2 celery sticks
3 tbs of olive oil
1 cup of chicken broth(low sodium)
salt and pepper
DIRECTIONS
Soak the lentils in wanter for 30 minutes. Meanwhile, chop the onion and fry it with the oil in a large pot. When it gets a little brown, add a little salt and pepper.Cut the carrots, zucchini, and celery into small pc and add them to the onion.Mix all the vegetables together for about 3 minutes, and then drain the water from the lentils and put it on top of the vegetables. Add 2 cups of water and 1 cup of chicken broth. Let it boil, and then put on low to medium heat for about an hour.
