INGREDIENTS
2 bananas
4 tbs raw honey
2 eggs
1 tsp baking powder
1/2 salt
1/2 cup water
2 cups almond flour
1/4 cup potato starch
4 tbs olive oil
1 cup fresh organic blueberries
1/2 cup maple or date syrup
DIRECTIONS
In a large bowl blend the bananas, honey, baking powder, and salt together, add water, mix until smooth. Add the almond flour, potato starch, and the eggs. Continue to blend until the batter is even.
Heat up a medium pan or skillet with a little bit of the oil, put on medium to low heat, Pour one large tbs of the batter to the pan, make an even circle, cook for 2 minutes on each side. Before putting each pancake, add a little bit of oil on the pan.
In a small sauce pan, heat up the maple or date syrup with the blueberries on medium heat, stir until hot and well mixed. Turn off and put it on top of the pancake when still hot.
