INGREDIENTS
1 cup of cooked brown and wild rice mix
1 large onion
1 large red bell pepper
1 large green bell pepper
1 bok choy
1/4 cup walnuts
3 tbs olive oil
1 tbs earth balance
1/2 tsp salt
1/2 pepper
1 tbs toasted sesame seeds
DIRECTIONS
Cook the brown and wild rice in a rice cooker. (Add 2 and a 1/4 cups of water to 1 cup of rice and a little oil and salt for flavor.
In a medium sauce pan, cut the onion in small to medium pc, add the oil on medium heat and fry them until they start to get brown. Cut the peppers to small pc and add them to the onions. Add salt and pepper, mix, and then add the bok choy after cutting it to medium pc. Add the walnuts, mix, and then add the cup of cooked brown and wild rice, add the earth balance, mix, and let it sit on low heat for about 10 minutes.Add the sesame seeds in the end.
