INGREDIENTS
1 pound of linguini whole wheat pasta
1 pound of ground turkey thighs
1 large onion
1 small red bell pepper
10 mushrooms cut
2 garlic heads minced
3 tbs olive oil
1/2 tsp salt and pepper
1 tbs red paprika
1 tbs tomato paste
8 oz organic low sodium tomato sauce
DIRECTIONS
In a large sauce pan, cut the onion and fry it with the olive oil. add the garlic, salt, pepper, paprika, tomato paste and stir. Add the bell pepper, mushrooms and mix it for a few minutes. When it gets less liquid, add the tomato sauce, mix, and let it cook in medium heat for about 10,15 minutes.
In a medium pot boil 4 cups of water, put a little bit of salt, add the pasta and let it cook until it gets a little soft, but not too soft. Drain the water, put back in the pot with a little bit of olive oil no the bottom, add the sauce from the pan, mix and let it cook on medium heat for about 10 more minutes.
