INGREDIENTS
6 chicken thighs with sin and bones
1/2 tsp salt
1/2 pepper
1 cup pineapple juice
1/4 cup soy sauce
1/4 cup brown sugar
1/4 cup ketchup
1/4 chicken broth
3 cloves of garlic, minced
1 tsp ginger
1 pineapple cut into wedges
2 green onions, thinly sliced
3 tbs olive oil
DIRECTIONS
Season chicken with salt and pepper, put in a large bowl. In a medium bowl, combine pineapple juice, soy sauce, brown sugar, ketchup, chicken broth and ginger. Pour it on the chicken and let it rest for 30 minutes. Meanwhile, grill the pineapple wedges from both sides in a large sauce pan with a little bit of olive oil, remove.
Add the sauce of the chicken, bring to a boil, add the chicken, cook until crisp in both sides, add the pineapple , cook all together for about 20 minutes and remove. serve the pineapple with chicken on top and garnish with green olives on top.
