FRITTATA WITH ALMONDS
INGREDIENTS
1 cup of cut mushrooms
1 cup of cut onions
2 cups spinach
2 large eggs
3 egg whites
2 tbs of spelt flour
1/3 cup shredded feta cheese
2 tbs olive oil
2 tbs shredded almonds
DIRECTIONS
In a medium frying pan heat up the oil, add the onion, add the mushrooms, mix for a few minutes, add the spinach and mix until vegetables become tender.
While the vegetables are being cooked, put in a medium bowl the eggs, egg whites, spelt flour, and feta cheese, whisk together and pour over the vegetables. cook for 2 minutes on one side and then flip to the other side and cook for another minute .
Transfer to a large plate and sprinkle the almonds on top.
