GINGER TOFU STIR FRY
INGREDIENTS
10 oz extra firm tofu
3 tbs olive oil
2 inch piece ginger thinly sliced
8 oz green beans
1 cup sliced bok choy
1 tbs lemon zest
1 tbs lemon juice
1 tbs low sodium soy sauce
1/2 tsp pepper
DIRECTIONS
Cut the tofu to one inch cubes and dry it on a paper towel. In a large pan heat 2 tbs olive oil over medium heat. Add the ginger, mix for one minute, add the tofu and stir fry until it gets a little brown from all sides. Remove and set aside.
Add the rest of the olive oil, green beans, bok choy, stir fry for a few minutes. Add the tofu back with the ginger, add the pepper, soy sauce, lemon juice, and lemon zest, toss for about 3 more minutes and turn off.
