INGREDIENTS
3 small cucumbers sliced
1 large tomato sliced into small pc
1 orange or red bell pepper sliced into small pc
1 large avocado sliced
1 can of tuna with water (2 oz)
1 tbs squeezed fresh lemon
2 tbs olive oil
salt and pepper for taste
DIRECTIONS
In a large salad bowl put the sliced cucumbers, tomato, bell pepper, avocado, and drained tuna. Add the lemon, olive oil, salt and pepper, mix and serve.

1 head of lettuce
2 cups of mixed organic greens
1 cup dill
2 large nectarines
3/4 cup peanuts
For the dressing
2 tsp honey
1 tbs peanut butter spread
1/4 tsp chile
4 tbs olive
salt and pepper
1 clove of garlic minced.
2 tbs water
DIRECTIONS
Cut the lettuce in medium pc and put it in a medium bowl. Add the mixed greens, cut the dill to small pc and add them to the bowl. Cut the nectarines into strips and add then too.
In a small jar mix all the dressing ingredients together, shake well, and put it on the salad and mix well. Add the peanuts on top.

2 cups of mixed greens
2 cups 0f lettuce
1 medium apple
1 medium tomato
10 fresh figs (or dry ones)
1/3 cup green olives
1/4 cup walnuts
4 tbs fig balsamic vinegar
3 tbs olive oil
1/2 tsp salt and pepper
DIRECTIONS
Cut the mix greens and lettuce and put them in a large bowl. Cut the apple and tomato to squares and add them. Cut the figs in half and add it to the mix with the olives. In a small bowl mix the vinegar, olive oil, salt and pepper and pour in on the salad. Mix, and then add the walnuts on top.
INGREDIENTS
1 cup of shredded rotisserie chicken
1 cup of avocado cut into cubes
1 small tomato
1 tbs of light mayo
salt and pepper
whole wheat tortilla
DIRECTIONS
Dice up the avocado in a medium bowl, add the shredded chicken, salt and pepper. Mix it, add the mayo, mix again until it is all creamy.
Take one whole wheat tortilla and put the mixture in the middle. Cut the small tomato and add it in. Roll up the tortilla to a wrap.

For the dressing
1 tbs mustard
4 tbs olive oil
2 tbs red wine vinegar
1 tbs sugar
2 tbs minimal water
salt and pepper
For the salad
400 gram corn
1/2 green cabbage cut in small pc
70 grams raisons
1/2 a cup pumpkin seeds
1 red bell pepper cut in cubes
handful of parsley cut
DIRECTIONS
In a small mixing bowl put the mustard, olive oil, vinegar, water, salt and pepper together and mix. In a large bowl put the corn, cut cabbage, bell pepper, mix, add the dressing, mix again. Add the raisons, pumpkin seeds, and parsley.
Option: can add chicken breast to the salad.
IGREDIENTS
2 cups of roasted chicken (cut into small pc)
1 large avocado cut into cubes
2 celery sticks cut into small pc
1/3 cup green onion cut into small pc
4 lettuce leaves
3 tbs lemon
3 tbs olive oil
salt and pepper
DIRECTIONS
In a medium bowl put the chicken, avocado, celery, green onions, mix them, add the lemon, olive oil, salt and pepper, mix again.
Put the lettuce leaves on a tray and put the mixture inside the lettuce.

7 cups of mixed baby kale and spinach chopped
3 cups of shredded green cabbage
2 medium oranges, peeled and cut into segments
1/2 a cup toasted walnuts
1/2 a cup fresh orange juice
2 tbs red wine vinegar
4 tbs extra virgin olive oil
1/8 tsp salt
1/8 tsp pepper
DIRECTIONS
chop the kale, spinach, and cabbage, put them in a large bowl. Add the cut oranges and walnuts. In a small bowl mix the orange juice, vinegar, olive oil, salt and pepper together.Add the dressing to the salad and mix.
Option: Can add pc of feta cheese to the salad (about half a cup).
INGGREDIENTS
1 large green apple
1 large fennel
1/4 cup black currants
1/3 cut walnut pieces
1 tbs white wine vinegar
1 tbs lemon juice, freshly squeezed
3 tbs olive oil
salt, pepper.
DIRECTIONS
Cut the apple and the fennel to thin strips (about 2 cups apple and 2 cups fennel). In a medium bowl mix the apple, fennel, currants, and walnuts. Add the vinegar, lemon, olive oil, salt and pepper.

1 medium green cabbage
1/4 cup roasted sesame seeds
1/4 cup cut almonds
1/4 cup olive oil
1/4 lemon juice
1/2 tsp salt
2 tbs honey
1/4 cup soy sauce
DIRECTIONS
Cut the cabbage to small narrow pc. In a small bowl mix the olive oil, lemon, salt, honey, and soy sauce. Add the mix to the cabbage, mix, sprinkle the sesame seeds on the cabbage and add the almonds on top.
Option
Can add cooked chicken breast to the salad.

DIRECTIONS
CUT THE LETTUCE, PUT IN A LARGE BOWL, ADD THE SHREDDED CARROTS, TOMATOES, CUCUMBERS. IN A SEPARATE BOWL MIX THE OLIVE OIL, MUSTARD, VINEGAR, GARLIC, DATE SYURP OR HONEY, LEMON, SALT AND PEPPER. PUT IT ON THE SALAD AND MIX. ADD THE WALNUTS AND CRANBERRIES AND MIX. SPRINKLE THE SESAME SEEDS IN THE END.
