VEGETARIAN OMELETTE
INGREDIENS
1/2 a small onion chopped
1/2 a small red or orange bell pepper chopped
3 small mushrooms cut
10, 12 fresh spinach and kale leaves
2 organic eggs
2 tbs of olive oil
salt and pepper
DIRECTIONS
In a small pan fry the onions with the olive oil, add the peppers, mushrooms, and in the end add the spinach and kale.Mix the eggs in a small bowl, add a little salt and pepper. Put the eggs on top of the vegetables, let it cook on one side, filp it to the other side, filp in in half, and turn the heat off.
